Eat the symbol of Yamal. A cloudberry cake by a chef from Moscow

In Salekhard a chef from Moscow BURO TSUM Vladimir Chistyakov created delicious symbols of Yamal in the restaurant “Panorama” on the 18th of December. He cooked gastronomic dishes – a dessert and a beverage.
Vladimir decided to become a cook 5 years ago. Before that he changed his profession many times, trying to find his vocation. And only when he found himself in the kitchen, he realized that it was something interesting. During his professional career, Vladimir managed to work with very influential chefs and owners of Michelin stars. Although he works in a Moscow restaurant, he is a Siberian, born and grew up in Krasnoyarsk. In his kitchen he tries to use traditional products.
He chose the cloudberry for the basis of the dessert. The chef considers this northern berry one of the best. The chef wants to revive culture of cloudberry consumption with his dessert and show potential of its tastes.
“It is a mystery to me: why such a useful and tasty berry is used only in northern regions in Russia and abroad”, he said.
The dessert – a cloudberry cake is very simple, so that it can be cooked both in a restaurant and at home. A correspondent of the news agency “Sever-Press” was one of the first to taste the possible delicious symbol of Yamal. The cloudberry cake turned out to be original, easy to cook, tasty and slightly sour, not very high in calories. The cake does not have a name yet, and soon residents of Yamal will have to think about it.
As for the beverage the cook mixed cloudberry puree, lime juice, cider and any alcohol.
Vladimir is called the chef of the new wave – an adept of seasonal, local, farmer’s. It is an original combination of European classics and fashion trends. The cook from Moscow is sure that they will be loved by both residents and guests of Yamal.
It should be noted that the search for a team ready to take on a “tasty” idea was announced within the project “Polar cases”. They issued a call all over the planet. Russian professional cooks and amateurs responded. There were offers even from distant Germany. The winners are the chefs from the Moscow restaurant BURO TSUM Dmitry Zotov and Vladimir Chistyakov, who came to Yamal.
