The enterprise “Yamalets” registered in Noyabrsk started manufacturing delicacy products of reindeer meat — chips, raw smoked and raw cured products, including jamon according to a Spanish recipe.
A technologist, who practiced in Spain, has been attracted to cooking of a trial consignment of jamon of venison. The recipe of the famous national delicacy — raw-cured pork leg — was adapted to reindeer meat, which was dried for a month with minimal addition of spices.
“We buy reindeer meat from enterprises of Yamal operating in the eastern part of the region – from the agricultural complex “Tazovskiy”, the state farms “Purovsky” and “Verkhne-Purovsky”. After processing already finished products are delivered to educational institutions in Gubkinskiy and Noviy Urengoy. Due to the temporary closure of kindergartens and schools, we had a surplus of raw materials – about 5 tonnes of venison, and we decided to experiment, to manufacture trial consignments of delicacies”, said Andrey Kolesnikov, the executive director of “Yamalets”.
Every product of the delicacy line is named after a town of Yamal: the sudjuk sausage “Novourengoyskiy”, the pastirma “Salekhardskaya”, the salami “Noyabrskaya”, meat slices “Muravlenkovskiye”, etc., as the press-service of the head of Yamal informs.
Trial samples of the products were sent for certification to Novosibirsk. After its completion “Yamalets” will start production of the delicacies. Since the company’s priority is to provide educational institutions with food products, it is not planned to launch them into mass production in the future. The manufacturer intends to produce them only on request, and it will be possible to brand the products in consideration of a customer’s wishes, for example, to put a name of an organization and its logo on the label. It is also possible to manufacture products according to individual recipes, including specially for significant events, such as anniversaries.
“We expect that our delicacy line will be in demand as souvenir and gift products. We are also negotiating with our restaurateurs, they are already showing interest”, said Andrey Kolesnikov. Since 2018 “Yamalets” has been involved in delivery of meat and fish products from food manufacturers of Yamal to schools and kindergartens of Gubkinskiy. Since this year deliveries have been made to educational institutions in Noviy Urengoy. In total, the enterprise is ready to supply educational institutions with more than 40 types of products — mainly semi-finished products. At the beginning of the year “Yamalets” released the first manual for school and kindergarten cooks in the region “Yamal products for health of Yamal children”. It explains in detail how to cook dishes of local products, prescribes cooking technology, consumption of raw materials and semi-finished products. This year the enterprise plans to open its own processing workshop in Noyabrsk.
